Almond Milk

Classic Almond Milk
Is a perfect and very tasty dairy alternative full of nutritional value.
Ingredients:

  • 1 cup almonds
  • 3 cups water
  • 1-3 dates (if you want it sweeter)

Directions:

  1. Place almonds and water in a blender and blend on high speed until nuts are completely broken and almond milk is created.
  2. Strain the almond milk through a fine sieve or nut milk bag into a bowl or jug. Save pulp for a dessert recipe, for dehydrating into almond flour, or compost.
  3. Rinse blender and add back in the strained nut milk.
  4. Add date(s) and blend.
  5. Taste test for sweetness and add more if required.
  6. Serve and savour!

Tip:
You can add 1 teaspoon of vanilla essence or half a vanilla bean to this recipe to create a vanilla milk. Additionally you can add a fingernail sized scraping of coconut butter to this for a creamier richer flavour.

Chocolate milk

Ingredients:

  • 1 cup almonds
  • 3 cups water
  • 1-3 dates (if you want it sweeter)
  • 1 t vanilla essence or ½ vanilla pod
  • 2 Tbsps carob powder

Directions:

  1. Place almonds, 1/2 vanilla pod, the carob powder and water in a blender and blend on high speed until nuts are completely broken and almond milk is created.
  2. Strain the almond milk through a fine sieve or nut milk bag into a bowl or jug. Save pulp for a dessert recipe, for dehydrating into almond flour, or compost.
  3. Rinse blender and add back in the strained nut milk.
  4. Add date(s) and blend.
  5. Taste test for sweetness and add more if required.
  6. Serve and savour!

more variations:
Try adding a handful of fresh strawberries.
For an even better taste try slightly roasting the almonds before blending.
In summer you should try making ice cream out of these… vanilla, chocolate and strawberry… get creative!
